Love is in the air

It’s Valentine’s weekend, and although my Valentine is across the ocean, I still enjoy participating in the holiday. Yes – I know it’s silly to show your feelings just because it’s February 14. Even so, it’s nice to remind people how much you care and celebrate the spirit of love.

I came across these cookies on Pinterest and decided to try making them. News flash: I am no chef, but these cookies were pretty easy to make (and delicious too!). Plus, they are a cute way to say Happy Valentine’s Day.


Strawberry Valentine Oreo Cookies

1 package of strawberry cake mix
2 eggs
3/4 cup of shortening

8 oz. cream cheese, room temperature
1/2 stick of butter, softened
2 tsp. vanilla
4 cups of powdered sugar

Preheat oven to 350 degrees.

Mix together strawberry cake mix, eggs and shortening until well combined. The dough will be pretty stiff. Roll dough into balls, making sure they are similar in size. Place dough onto ungreased cookie sheet and bake for 8 minutes. Immediately transfer cookies to a cooling rack.

While the cookies are cooling, mix together cream cheese, butter, vanilla and powdered sugar until smooth. When cookies are cool, frost them and sandwich like and Oreo.  And voilá – you have strawberry-flavored cookies perfect for Valentine’s Day!


*Makes 12-15 cookies after they are sandwiched together

    Those cookies look great. I’ll bet there’s none left little brother around. Hope you had a great “V” Day. Say Hi to Sebastian when you talk to him. Canb’t wait to meet him one of these days. Love Ya!

      The cookies were delicious, but you’re right, they didn’t last long ;-) I hope you had a wonderful Valentine’s Day as well! And Sebastian might try to come for Joey’s graduations, so maybe you will get to meet him. Love you too, Uncle Bob!
