Love notes

Sometimes I think Valentine’s Day is bit overdone. Don’t get me wrong, I’m a fan of presents (or a surprise visit) just as much as the next girl, but you shouldn’t need a holiday to let someone know you care.

Maybe all you need is a simple note to say you love them. I love the cards from Rifle Paper Co. I first saw them on A Cup of Jo and became a fast fan. They’re cheeky and whimsical (and made in the U.S.). Sebastian shouldn’t be surprised if he gets one in the mail this year.

Here’s to February

Every time February arrives, I think of the time my brother said this:

“It’s pretty unfair that February gets less days than all the other months.”

It still makes me laugh out loud, but in all honesty, he had a good point. Poor February really gets gypped. At least it has some unique celebrations like Groundhog Day and the Super Bowl. Plus one of my favorites – Valentine’s Day. Yes, it’s a cheesy holiday that you either love or hate, but I can appreciate a day that celebrates love. And doesn’t everyone need more of it in their life?

So here’s to February, the month that celebrates love and football and a little, furry rodent.

Valentine’s surprise

Sebastian is a special guy. He remembers the important days and always goes out of his way to do something sweet. Because of this, I was expecting him to do something thoughtful for Valentine’s Day. When I received flowers at the office, it was really nice (especially since they were my favorite – tulips), but not a huge surprise.

But then he called to tell me that although nothing was confirmed, he might be in the States on Thursday. Once I got over the initial shock, I realized that Thursday was in two days! I couldn’t even believe it.

And then I got the confirmation this morning – Sebastian will be here TOMORROW!

Love is in the air

It’s Valentine’s weekend, and although my Valentine is across the ocean, I still enjoy participating in the holiday. Yes – I know it’s silly to show your feelings just because it’s February 14. Even so, it’s nice to remind people how much you care and celebrate the spirit of love.

I came across these cookies on Pinterest and decided to try making them. News flash: I am no chef, but these cookies were pretty easy to make (and delicious too!). Plus, they are a cute way to say Happy Valentine’s Day.

Strawberry Valentine Oreo Cookies

Ingredients
Cookies:
1 package of strawberry cake mix
2 eggs
3/4 cup of shortening

Frosting:
8 oz. cream cheese, room temperature
1/2 stick of butter, softened
2 tsp. vanilla
4 cups of powdered sugar

Instructions
Preheat oven to 350 degrees.

Mix together strawberry cake mix, eggs and shortening until well combined. The dough will be pretty stiff. Roll dough into balls, making sure they are similar in size. Place dough onto ungreased cookie sheet and bake for 8 minutes. Immediately transfer cookies to a cooling rack.

While the cookies are cooling, mix together cream cheese, butter, vanilla and powdered sugar until smooth. When cookies are cool, frost them and sandwich like and Oreo.  And voilá – you have strawberry-flavored cookies perfect for Valentine’s Day!

Cheers to the weekend

This weekend I have ZERO plans, and I’m absolutely ecstatic about it. As a 23-year-old this probably makes me sound lame, but I’m perfectly content with lame.

And looking at the weather forecast, it seems like the perfect weekend to put on some sweats, bake cookies and watch romantic comedies (it is Valentine’s weekend after all).

ForecastMy plan is awesome. The only thing that would make it better is having Sebastian next to me. But since that’s not a possibility, I’ll settle for this guy:
